Rehearsal Cocktail Party

We are doing a late rehearsal (7pm) on the Friday before the wedding, followed by a cocktail party where we will serve hors d'oeuvres and dessert. Here's the menu:

Cold Hors D'Oeuvres - veggie tray with dip, fruit tray with dip, sushi platter, shrimp , gourmet cheese platter, spinach dip in a pumpernickel loaf
Hot Hors D'Oeuvres - mini grilled cheese,  mini pulled pork sandwiches, mini deep dish pizza, mini spring rolls, mini chicken quesadilla
Desserts - mini buttertart squares, mini pumpkin cupcakes with chai cream cheese icing, mini chocolate orange cheesecakes with chocolate orange ganache
Drinks - Beer, white wine, red wine, pop, water, coffee and tea


The reception will begin at 5pm, dinner at around 6:30pm.  There will be full open bar before and after dinner, unlimited wine during's the menu:
Hors D'Oeuvres -
crab cakes, bruschetta with feta, brie wrapped in phyllo pastry with raspberry compote
First Course - Soup - butternut squash and spy apple
Second Course - Salad - caesar salad with pancetta and parmesan
Third Course - Entree - prime rib with chicken supreme, mashed potatoes and roasted carrots and parnsips.
Fourth Course - wedding cake for all! (see cake details below)
Late night Buffet - mini sirloin burgers and fries, and crudites platter


We are getting our cake from a great lady named Andy. It is going to be a 4 tiered cake, with white fondant, with ribbon and a few sunflowers made of icing. It is going to be chocolate cake with chocolate ganache and vanilla buttercream icing. I can't wait to eat it.

On the drawing that Andy made the 'yellow' is supposed to indicate ivory, not yellow. The only yellow on the cake will be the sunflowers that will sit between some of the tiers, I think there might be 3 or 4 of them.  On the photo she also indicated which tiers are going to be fake tiers (round) and which will be real (square). The cake as drawn will serve 104 people. If we end up with more guests, which we might, we will have a small slab made for the extra pieces.  The cake is costing $3.25 a serving.
